It wasn\u2019t a random choice \u2014 her mother was born here, and this is where her roots and values lie.<\/p>\n<h3>A business in her mother\u2019s village \u2013 a challenge with a surprising outcome<\/h3>\n<p>\u201cI came thinking that people would welcome this bread with open arms, that we\u2019d have an affordable rental in the village and then serve the Cluj market. But I quickly discovered it wasn\u2019t that simple,\u201d Luissa admits. In Romanian villages, bread is a familiar, almost communal craft \u2014 people know how to make it. So when a young woman with experience from abroad offers a different kind of bread, reactions can be surprising.<br \/>\nThe surprise was that the bread caught on immediately. \u201cWhen someone comes back and orders the same product again, that\u2019s the best kind of validation,\u201d says Luissa.<br \/>\nToday, quality and consistency are her guiding principles.<\/p>\n<h3>A PhD inspired by her grandmother\u2019s words: tradition meets science<\/h3>\n<p>Luissa doesn\u2019t just make bread \u2014 she also studies the science behind it. Her PhD focuses on natural starters, fermentation, and digestibility \u2014 how dough and the fermentation process can make bread a healthy food that doesn\u2019t cause discomfort. \u201cWe avoid adding a large amount of yeast and waiting for the bread to rise in two hours. We use starters that ferment for two to three days, which makes the product healthier for the body.\u201d<br \/>\nThis approach also stems from a personal experience. After spending years abroad, Luissa was diagnosed with acid reflux and irritable bowel syndrome, which made it impossible for her to eat regular bread. That\u2019s when she began to rethink how she made bread \u2014 and how she ate.<\/p>\n<h3>Lessons from the West and the reality in Romania<\/h3>\n<p>\u201cAbroad, I learned what appreciation at the workplace means, along with trust and proper compensation. In Romania, I didn\u2019t have that kind of support, but the experience made me stronger,\u201d Luissa says. Living abroad gave her the courage to start a soul-driven project in her mother\u2019s village \u2014 not just as a business, but as a personal mission.<\/p>\n<h3>A connection to the past: her grandmother\u2019s mill and a belief in bread<\/h3>\n<p>Luissa\u2019s grandparents owned a mill in Feleacu, and that memory accompanies her with every loaf she bakes. \u201cWhen I touch the bread, I feel closer to God and to my family,\u201d the young entrepreneur confesses.<br \/>\nLuissa believes that today\u2019s youth need more education about nutrition and health. \u201cMany young people have digestive issues and don\u2019t know why. I had to relearn how to eat and become mindful of what I consume in order to feel well.\u201d<\/p>\n<h3>A message for dreaming youth<\/h3>\n<p>\u201cI\u2019d tell them to listen to their hearts and stick with what brings them joy. It\u2019s important to surround yourself with people who inspire and support you. Courage and patience are essential for any project.\u201d<br \/>\nLuissa Maino doesn\u2019t just bake bread \u2014 she\u2019s building a bridge between tradition and science, between Italy and Romania, between the village and the world. Her story is a reminder that, in the end, if you have bread, you have everything.
